HUKKURA BROWN RICE FRITTATA

Ingredients:
  • 6 large eggs
  • 1/4 cup whole milk (may substitute with low fat milk)
  • 1 cup cooked HUKKURA Brown Rice
  • 1/4 teaspoon salt
  • 1 teaspoon butter or margarine
  • 1/2 cup chopped onion
  • 1 large tomato, diced
  • 1/2 cup shredded Monterey jack cheese (2 oz.)

Directions:
Beat eggs with milk to blend. Stir in rice and salt. Melt butter in large (10-inch) frying pan, preferably nonstick, over medium heat. Add onion; cook and stir 2 minutes, or until onion is translucent. Pour egg mixture over onion. Reduce heat to low; cover and cook 14-17 minutes, or until eggs are set. Flip side once and sprinkle tomato and cheese evenly over top. Cover and cook 1 minute longer, or until cheese melts. Remove from heat. Cut into wedges and serve with salsa or catsup, as desired.
