BROWN RICE PUDDING
- 1 cup HUKKURA Brown Rice
- 1/4 teaspoon salt
- 2 eggs
- 2 cups whole milk (may substitute with low fat milk)
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon cinnamon
Combine rice, salt and 2-1/2 cups water in 2-quart saucepan. Bring to a boil. Reduce heat to low; cover and simmer 20 minutes, or until moisture is absorbed. Remove from heat. Beat eggs with 1/2 cup milk, sugar and vanilla. Stir remaining milk into hot rice. Mix in egg mixture and cinnamon. Transfer into a baking dish that has been lightly coated with cooking spray. Bake uncovered, in 350°F. oven, 50 minutes to 1 hour, or until set. Remove from oven. Cool to room temperature and serve, or cover and refrigerate, as desired.
Makes 8 servings, about 1/2 cup each.
