Chocolate Plum Cake

  • 1-1/2 cups flour
  • 1/4 cup Dynasty Plum Sauce
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 cup butter, soften and divided
  • 1 cup sugar
  • 1-1/2 cups evaporated milk
  • 2 eggs, slightly beaten
  • 3 (1oz) squares unsweetened chocolate, melted
  • 1/2 teaspoon vanilla extract
  • vegetable spray

Preheat oven at 350F, grease a 9 inch round cake pans with vegetable spray.
In a medium bowl, sift together flour, baking powder, baking soda, and sugar.
Soften 1/4 cup butter, whisk together plum sauce with milk, vanilla extract and egg in a large bowl. Gradually add in flour mixture, beat at medium speed for 1 minute.
Place chocolate blocks with the remaining 1/4 cup of butter in a small bowl over a pot of hot water, slowly melt the chocolate to liquid consistency. Remove from heat.
Add the melted chocolate to the cake mixture and beat 2 minutes at medium speed until well blended.
Pour the batter to the baking pan and bake for 45 minutes or until a toothpick inserted into the cake and comes out clean.

Makes 8 servings

Per serving: 364.5calories, 7g protein, 22g fat, 41.5g carbohydrate, 330.5mg sodium, 98mg cholesterol.

Note: If preferred, sprinkle 1 tablespoon of powdered sugar on top for decoration.
